Here’s another mug cake (brownie) recipe. This recipe i found on one of my favourite websites- Bigger Bolder baking. This blog is a bakers dream come true, i mean it has so much useful information its unreal. The writer/ blogger Gemma makes baking so easy. She writes the easiest recipes that give great results all the time! I especially love her Cinnamon Roll Recipe. Be sure to check her site out if you’re a keen baker- you won’t regret it!
Okay, back to the brownie. Another magical treat waiting to happen in your kitchen. As with the Biscoff mug cake recipe i shared, this microwave brownie is also quite easy and straightforward. You’ll probably have all the ingredients in your kitchen ( if you don’t then, what are you even doing here???? i joke i joke).
All you need to do is mix all the ingredients, pour into a cup or ramekin and put it in the microwave ( you would have never guessed!) , and you’ll be left with a decadent chocolate brownie without all the stress of melting chocolate and waiting for it to cool and blah blah blah.
Heres what you’ll need:
- 3 tablespoons of all purpose flour
- 3 tablespoons of brown sugar
- 3 tablespoons of GOOD QUALITY cocoa powder (this is really key to achieving that rich chocolate flavour)
- 3 tablespoons of oil ( canola/vegetable)
- 3 tablespoons of Water
- pinch of salt
- 1/2 teaspoon of vanilla extract
- 2 teaspoons of milk chocolate chips/ pieces
Mix all the ingredients ( apart from the chocolate chips) with a whisk or fork until smooth. Then fold in your chocolate chips. What i like to do, is save a few for the top of the cake.
Cooking time depends on your microwave. 45 seconds to a minute should do! Keep an eye on your cake, you don’t want it to be overcooked.
If you can’t wait, go ahead and eat it straight out of the microwave ( I willl not be blamed for burnt tongues etc), but if you have a bit more self control let it sit for a few minutes.
We can’t stop there obviously, if you want to go the extra mile, get yourself a scoop of vanilla ice cream to accompany your brownie!

Ummss which cocoa powder would you recommend?

Cadbury have a good one, there’s also this one I got from ASDA, that one is called “menier chocolat patissier cocoa powder”
