Happy Valentines Day to the Bae-less and Single Pringles!
I’m back with yet another mug cake recipe- ( I love these, if you can’t tell), they’re just so nice and easy and QUICK to make. If you don’t have any plans for today why not TREAT YO SELF to this BOMB mug cake and have some me time!
This white chocolate and strawberry mug cake is YUM! It’s so rich. It almost tastes like a white chocolate brownie. It has a slight chew to it making it an even better sweet treat for when you need that sugar rush.
This isn’t your average mug cake, it has a layer of jam at the bottom and a sprinkling of white chocolate chips on top, finished with a scoop of vanilla ice cream and some fresh strawberries- a bit like a Victoria sponge cake reinvented.
You can use any type of jam you wish- I used strawberry but raspberry is fine. As with the previous mug cake recipes, the method is pretty simple.
This particular recipe is also EGG FREE!
Here’s what you’ll need:
- 1/4 cup white chocolate chips (any white chocolate bar will do)
- 3 1/2 tablespoons of fresh milk
- 1 tablespoon sugar
- 1 teaspoon oil (sunflower, vegetable or canola)
- 3 1/2 tablespoons plain flour
- 1/4 teaspoon baking powder
- 1 tablespoon jam of choice
You’ll need a microwave safe bowl as well as a mug for your cake. Put the chocolate and milk in the bowl and melt gently, about 40 seconds should do. Mix it to dissolve the chocolate completely.
Then, add your flour, sugar, oil and baking powder to the melted chocolate mix and blend till smooth with a fork or a small whisk.
In your mug, place your jam at the bottom.
And then pour your batter on top of the jam! You can add more white chocolate on top if you wish.
Cook your cake for about 1 minute 30 seconds. Check your cake after the first minute and if its cooked then take it out of the microwave (OBVS), if not, continue cooking it in 10 seconds intervals, checking it so it does not overcook. When it’s done, it should look like this.
The cake is perfectly okay to eat now, but as usual- I added a scoop of vanilla ice cream and a fresh strawberry cut in half.
