Strawberry Cheesecake Truffles

I’m loving these no bake treats, and I love Cheesecake, but don’t always want a whole cheesecake to myself.

So whats better than Strawberry Cheesecake truffles? Nothing! They’re so Easy and oh so cute to make. I think i’m developing a thing for truffles- they’re just so versatile and with 100’s of recipes and ideas lying around on Pinterest (where I spend quite a lot of my time) there’s endless possibilities!

Whenever i’m making something I always like to prep the ingredients first, so I’ve already crushed my biscuits and chopped up my strawberries!

And now for the assembling!

Heres what you’ll need:


  • 10 1/2 digestive biscuits crushed
  • 1/3 cup (3 medium) strawberries chopped
  • 1/3 cup (40g) icing sugar
  • 110g cream cheese
  • 1 1/2 cups of white chocolate melted


Mix the cream cheese, sugar and biscuit crumbs together until it all comes together.


Fold in your chopped up strawberries and Refrigerate your truffle mix for 10 minutes to harden.

Using a tablespoon or a Mini scoop, scoop out portions of your mix onto a piece of parchment paper and refrigerate for another 10 minutes.


Now, take your portions of “batter” out of the fridge and roll into balls, and place in the fridge for another 10 minutes ( I know, I know, Stress-but it’s just because the  mix is quite wet), while you melt your chocolate.


Just as with the biscoff truffles, using a fork dip your truffles into the melted chocolate until it’s encased in chocolate!

When you’ve finished dipping all your truffles into the white chocolate, set them aside to harden. You’ll have some chocolate left, you can colour this chocolate whatever colour you desire- I did pink, and drizzle it all over your truffles to give it that whimsical feel!
