Biscoff Cookie Butter Mug Cake

I hope for the sake of all things good you’ve heard of Biscoff biscuit butter. If you haven’t, let me take a few minutes to tell you what this goodness is.

Basically, Biscoff make these caramelised, crunchy, sweet biscuits that are HEAVEN. To make things better for their business and worse for people like me who can’t stay away from anything sweet, they made the biscuits into a SPREAD! WHY OH WHY? ( she says over dramatically)

The spread is ULTIMATE decadence ( fancy lol). Its sooo creamy and yummy… its too good.

One evening i got the urge to drown myself in 00000’s of calories and the easiest thing to make on a school night was a mug cake. I had gone grocery shopping at the beginning of the term and of course i bought some random unhealthy things  (i.e. biscuit spread). I mean, I’ve given up on trying to join Fitfam tbh.

Anyways, i went rummaging through the kitchen cupboards and The cookie butter (officially known as biscuit spread) was standing there in all its Glory, so i ran back to my room ( okay i didn’t actually run) to find a recipe. Google is your best friend guys as my sister always says (s/o Hal). After opening about 5 tabs i settled with one recipe from a blog that was obviously also in love with  the cookie butter. I changed the recipe a bit for myself.

The recipe is pretty simple, you probably have all the ingredients in your kitchen cupboard, except the cookie butter, which you should go and buy RIGHT NOW. Seriously, drop whatever you’re doing and go get you some!

Heres the recipe and how to get the Perfect sweet treat under 10 minutes!

You’ll need:

  • 4 tablespoons of self-raising four or ( plain flour + 1/4 teaspoon baking powder)
  • 3 tablespoons sugar ( or 2 if you don’t want it too sweet)
  • an egg
  • 3 tablespoons fresh milk
  • 3 tablespoons vegetable oil
  • 3 tablespoons of biscuit spread

All you have to do is mix all the ingredients until there are no lumps with a whisk or a fork and pour into one rather large mug or into 2 smaller mugs and cook the batter in the microwave.

Cooking time depends on your microwave, but 1 minute 30 seconds to 2 minutes should do the trick!

Be careful not too overcook the cake as it will become rubbery (we don’t really want this).

After my cake was done, I took my cake to another level. I mean, your cake is perfectly okay to eat now. But if you’re like me and like the good things in life then DO these next steps!

I put about 1 teaspoon of the cookie butter on the hot cake and let it melt, then i topped it off with some vanilla ice cream AND ( yeah i didn’t stop there) i crushed a biscoff biscuit ontop! (extra but i love itttt!)

I mean, this was pretty awesome. It was  quite overwhelming. (be sure to have a bottle of water on standby!)
